Some projects leave a lasting impression, not just for their creative demands, but for the memories they create long after the event is over. One such project was crafting edible chocolate centrepieces for a wedding at the National Gallery of Victoria. Although I wasn’t present at the event, I received feedback from the bride that, even years later, guests still fondly talk about the chocolate sculptures. Knowing that my work continues to be remembered fills me with immense pride.

The Vision Behind the Centrepieces

The couple’s request was to craft something out of the ordinary—something that would be a conversation starter, a piece of edible art that would blend perfectly into the stunning backdrop of the gallery’s stained-glass ceilings and contemporary design. Together, we conceptualised chocolate sculptures that were not only visually impressive but also interactive, allowing guests to break off pieces and savour them throughout the evening. Sitting on a long vase filled with chocolate shards, there was plenty indulgence to be had.

Crafting the Chocolate Sculptures

Creating these centrepieces required great attention to detail and an understanding of how chocolate interacts with the environment. Using only the finest couverture chocolate, I meticulously hand-sculpted each piece, ensuring the flowing curves and delicate chocolate orbs would mirror the artistic aesthetic of the venue. The sculptures had to be striking and structurally sound, all while maintaining their rich taste and freshness until they were enjoyed by the guests.

Each centrepiece featured a combination of abstract, flowing lines and chocolate spheres to give it height and elegance. The chocolate was as much about aesthetics as it was about flavour, with the aim of delighting both the eye and the palate.
